世間体ではなく、造りたいものを造るという美川杜氏の遊び心が良いなあと思うのですが、たまになんでこの味に留めてしまったんだということもありますので、難しさも持っています。

さて、このお酒、そのまま召し上がっていただいても良いのですが、炭酸で割って召し上がってみてください。ガラリと表情が変わる、まさに豹変する一杯となります。炭酸比率は酒：炭酸＝６：４というところが私は好きです。

さくら肉との合わせがお勧めですが、あか牛ハンバーグやチキン南蛮などもお勧めです。え？刺身？意外にもイカ刺しなんぞが合うかと思います、知らんけど。

It seems like Fukui Prefecture is experiencing heavy snowfall, but this sake from Mikawa Sake Brewery, the brewer of this Maibijin, has an acidity of 8.8. That’s a number that makes you think, “They’ve done it again!”

I admire Mikawa’s playful spirit, making what he wants to make, rather than just following social standards. However, sometimes I wonder why he stuck with a certain flavor, so it’s a difficult challenge.
・
Now, while you can enjoy this sake as is, try mixing it with some soda. It’s a completely different experience, truly transforming the drink. I like the carbonation ratio of 6:4 between sake and soda.

Actually, I have a “MYVY” bottle. I’m planning to enjoy it with that as well. The ratio of sake to soda to MYVY is planned to be 6:3:1.

We recommend pairing it with cherry beef, but Akagyu hamburger steak and chicken nanban are also recommended. What? Sashimi? Surprisingly, I think it would go well with squid sashimi, though I don’t know.
