有言実行が良いのか、不言実行が良いのか。多感期に悩んだことはありませんでしたか。私は悩みました。そうです、おいしい酒倶楽部の今井です。

而今とは、「今この瞬間」や「過去にとらわれず、今をただ精一杯生きる」という意味を持つ禅の言葉で、私が大西さんと出会ったときには既に「而今」は発売されており、より求める完成形に向けて進化をし続けている最中でした。

さまざまな過程を経て、いまに至っているわけですが、而今蔵が醸した白鶴錦は、山田錦に比べて粒や心白が大きく、雑味の原因となる成分が少ないため、すっきりとしつつも華やかで奥行きのあるお酒に仕上がることが特長だそうです。

言うならば、而今ならその味わいにピッタリでしょう、と思ったか思わなかったかは判りませんが醸されての登場です。

[Jikon Junmai Daiginjo Hakutsurunishiki (Pasteurized)]

Jikon is a Zen-inspired term that means “this very moment” or “living fully in the present without being bound by the past.” By the time I first met Mr. Onishi, Jikon was already on the market, and the brewery was in the midst of continuously refining and evolving the sake toward the ideal expression it sought to achieve.

Through many stages of development, that journey has led us to where we are today. The Hakutsurunishiki brewed by Jikon Brewery is said to possess larger grains and a larger shinpaku (starchy core) than Yamadanishiki. Because it contains fewer components that can contribute unwanted flavors, it produces a sake that is both remarkably clean and elegantly expressive, with impressive depth and complexity.

Whether the brewers consciously thought, “If any brewery can bring out the full potential of this rice, it would be Jikon,” is impossible to know. What we do know is that the result has arrived in the glass.

Hakutsurunishiki is a sake rice variety developed by Hakutsuru Sake Brewing with the ambitious goal of creating a rice that could surpass Yamadanishiki. Achieving that goal required years of dedication and considerable hardship. It’s a fascinating story well worth exploring for yourself.
