大山 十水 特別純米酒 Sparklingの魅力

昨今の日本酒は「十二水」と言われる仕立てになっています。「十水」とは掛米と同じ量の水を入れることで、十二水は2割ほど水を多く入れる仕立て。

だからと言って、決して水っぽくなるとか、薄くなるとかという話ではありません。

しかし、十水にすることでコクや濃さは感じやすくなります。そこを調整するのが杜氏技ということになります。

そもそも、ここ最近、十水で醸し始めた蔵は加藤嘉八郎酒造ではないかと思っています。

大山の醸す十水は上品なまでに色艶良く、味わい深い仕上がりになっています。薄い味わいの日本酒と比べれば濃く感じますが、その比べ方は意味がありません。

要はこの日本酒が実にバランスが良い酒を送り出している蔵元が醸しているスパークリングだということです。

正直、これをいただかずに発泡酒は語れないなと思うほどの仕上がりになっています。
