天領盃が醸す貴醸酒「RE-BIRTH Time Machine -Ouroboros-」

さて、今回もちょっと真面目です。

元旦の16時10分頃に起きた能登半島地震ですくなからずも罹災した天領盃蔵。「雅楽代の日和の火入れが壊滅的」と吐露した蔵元を務める加登仙一さん。努力は一瞬の惨事で水泡に帰しました。が、その酒を醸した際の経験は知的財産として確実に残ったことでしょう。

それを糧に次に挑んでいただければと心より祈念しております。

その一連の流れの中で育まれたご紹介する貴醸酒は、転生、無限を意味するウロボロスと名付けられて、自分の尾を噛んで環を作る蛇または竜で表現されるシンボルとされています。

しかし、日本酒の世界ではどうなのか？
・
貴醸酒を醸す際に「古い酒を新しい酒に使う：古新融合」を軸に捉え、再生し続けるウロボロスをシンボルにしたそうです。
・
さて、その味は酸の働きで、貴醸酒特有の甘さが見事にキレます。気持ちが良いぐらい喉残りしない見事な仕上がり。センスの良さが光っています。言われて醸している間はこういう発想が出ないだろうと思います。

The Tenryohai Sake Brewery was naturally damaged by the Noto Peninsula earthquake that occurred at around 4:10pm on New Year’s Day. “The pasteurization of Utashiro’s Hiyori was devastating”, said brewer Senichi Kato. All efforts were in vain in a moment of disaster. However, his experience in brewing that sake will surely remain as intellectual property.

I sincerely hope that he will take advantage of this experience and take on his next challenge.

The Kijoshu（noble brewed sake） we introduce was developed through this process and is named Ouroboros, which means reincarnation and infinity, and is symbolized by a snake or dragon biting its own tail to form a ring.
・
But what about the world of sake?
・
When brewing Kijoshu（noble brewed sake）, they focus on the concept of “using old sake to make new sake: fusion of old and new”, and they chose the ever-regenerating ouroboros as a symbol.
・
Well, the taste is due to the action of acid, and the sweetness unique to Kijoshu（noble brewed sake） is sharpened perfectly. A wonderful finish that doesn’t leave a feeling in your throat. Good taste shines through. I don’t think people will come up with ideas like this while they are being told this.
・
A taste that lasts into the future. Every time you brew it, a milestone is created. Please take this opportunity to try it out.
