重陽の節句である9月9日が「ひやおろしの日」だったんですか? いやあ、知らなかった!立秋であった8月7日が過ぎたら、続々と「ひやおろし」「秋あがり」が出て来ましたからね。

さて、このハーベストムーンは、ムーンシリーズの3作目「秋上がりした冷卸」です。正確には書かれていないのですが、麹米に愛山米、掛米に雄町米を使っている、時に全量愛山米で醸すことがあるという純米酒です。

日本酒が客膳の脇役ではなく、副菜のひとつとして、揃い並ぶと言えるぐらい良い仕上がりです。言わば、主題の伏線を司る名脇役。

しかし、嗜好品ですから、私はこれが好きでもあなたが好きとは限らない。ですので、なるべく言葉に置き換えてその味わいを伝えようとしているのですが、こればかりは「百聞は一飲に如かず」。

召し上がることによって言わんとすることが納得できることでしょう。

I found myself discussing with my usual drinking companions exactly when “true autumn” begins. I answered that, for me, it’s when the ginkgo trees along the Koshu Kaido in Hachioji turn yellow. What would your answer be? Pardon me—this is Imai from the “Oishii Sake Club.”

Did you know that September 9th—the day of the *Choyo* (Chrysanthemum) Festival—is actually “Hiyaoroshi Day”? I certainly didn’t! After all, “Hiyaoroshi” and “Aki-agari” (autumn-matured) sakes start appearing one after another as soon as *Risshu* (the start of autumn) passes on August 7th.

Now, this “Harvest Moon” is the third release in the “Moon Series”—an *Aki-agari Hiyaoroshi* (an autumn-matured, unpasteurized-after-storage sake). While not explicitly stated on the label, it is a *Junmai* sake brewed using *Aiyama* rice for the *koji* (starter) and *Omachi* rice for the *kake-mai* (main mash)—though sometimes it is brewed entirely with *Aiyama*.

The finish is so superb that the sake doesn’t merely play a supporting role at the dining table; it stands proudly alongside the side dishes as a peer. It is, so to speak, a brilliant supporting actor that lays the groundwork for the main theme.

Of course, taste is subjective; just because I love it doesn’t mean you will. I try my best to convey the flavor in words, but when it comes to this, “a single sip is worth a hundred descriptions.”
